The Simple Greek opened its second location, at the Shops at Somerset Square on March 26.

Owner George Chatzopoulos and manager Maria Matoshi have had a successful franchise in West Hartford, and things have been looking good since opening in Glastonbury.

"It's been great," Matoshi said. "Everybody is loving it. Everybody is so happy. We've gotten very good feedback from everyone so far."

The Simple Greek specializes in catering to on-the-go diners, and makes everything to order.

"We're a 'build-your-own' concept," Matoshi said. "We build pitas and bowls. Ninety-five percent of our products are made here. We make our rices, we make our rice pudding. Our meats are marinated here. We have a Greek bakery, where we make our baklava and cheesecake. Everything is fresh, and we try to keep our products high-quality."

Matoshi said the bowls are most-popular, offering guests a chance to try a lot of items from the menu. Items include chicken, lamb, steak, and cold toppings, like feta cheese, olives, hummus, and a wide variety of vegetables.

"Our sauces are made here," Matoshi said. "In our Tzaziki, we use 100 percent Greek products. Our honey is imported from Greece, even the salt is imported from Greece. We take so much pride in our food."

The Simple Greek employees approximately 20. Matoshi comes from a 16-year restaurant background, starting in Greece. She moved to Rocky Hill, and bussed tables before working at another restaurant in Glastonbury.
