Nearly 20 years ago, gourmet chef John Scardapane decided he wanted to open a unique restaurant that would serve healthy, delicious, made-to-order salads for the masses. Even then, John knew it was a niche that needed to be filled. And was he ever right. That first restaurant in a New Jersey shopping mall made more than four times the projected sales volume, and it wasn't long before successful Saladworks franchises started sprouting up everywhere.
